Next Workshop – Venison, Saturday 26th November 2016
Take wild wicklow venison to the next level. Get more from your carcase, and learn new ways of preparation. This workshop is intended for hunters and non-hunters alike.

Venison Workshop Content:
- Carcase Overview, discussion on factors affecting meat quality.
- Carcase Handling/ Hanging Tips.
- Discussion and demonstration on seam boning and it’s merits.
- Practical Sausage/ Burger making session with organoleptic evaluation. And take-home sausage making kit.
- Principles of Curing/Smoking with organoleptic evaluation.
Please note this is a hands-on workshop in a wet room environment. Warm clothes and clean wellies and your own apron are necessary. All other tools and equipment are provided. HCAP and/or Trained Hunter Certification not required.

You will learn about seasoning and flavour combinations and at the end of the night have your own tasty sausages to take home with you.

Our wild Venison workshop “deerlicious” is a great way for you to learn about the handling and preparation of Wild Wicklow Venison.
