We are a small family business operating from Dun Laoghaire, Co. Dublin.
The main focus of our business is in wholesale and supplying to the trade. We offer a wide range of handmade products for both shops and restaurants. From traditional rashers, sausages and puddings to the slightly more out there bacon jam (it’s like a terrine in a jar – kind of!).
We also supply a range of cured meats and salamis and some cured venison products.
Hick’s sausages have quite a following, and we are one of very few producers of 100% pork gourmet sausages

We make fresh blood pudding – that means, unlike many other puddings on the market we do not use freeze dried imported ingredients and we only use pig products in the mix.
Above all, we aim to use traditional techniques and ingredients that are as local to us as possible to make all of our produce. Long, slow curing times are crucial as is a respect for using natural ingredients and leaving out anything artificial from the process.
